VEGAN ENGLISH BREAKFAST

1 pack Bonsan Kofu Sausages
2 tablespoons coconut oil
1 pack Bonsan Kofu Breakfast Scramble
A large handful of mushrooms, roughly chopped
10 cherry tomatoes
2 large handfuls of kale, massaged
Pinch of salt & pepper
Baked beans
1/2 an avocado, thinly sliced
Toast (rye)
Sesame seeds to serve

Serves: 2

1. Heat a large frying pan on a medium heat and add in the coconut oil. Once it has melted add in the sausages and fry until brown. Keep warm in a low heat oven.

2. Add in the mushrooms & tomatoes, turn the heat down and cook for 5 minutes, occasionally stiring.

3. At the same time as the mushrooms are cooking, crumble the kofu breakfast scramble into another hot frying pan and warm thoroughly.

4. Finally, heat beans, toast your bread and serve all the elements onto a plate with the avocado sprinkled with seasame seeds..
