Vegan Banana Pancakes

1 ripe banana
150g wholemeal flour
2 tsp coconut sugar
1/4 tsp salt
1/2 tsp cinnamon
A pinch of ground cardamom
1 1/2 tsp baking powder
2 tsp Bonsan Sunflower Ghee + more for frying
200ml plant based mylk

Serves: 10 pancakes

1. In a large bowl and add the flour,sugar, salt, cardamom, cinnamon and baking powder. Mix all the ingredients really well.
2. Peel the banana, chop in small chunks and mash. Add the banana and milk to the mixture and stir well (or use a blender). Add 2 tsp ghee in the batter and mix.
3. Place a large frying pan over a medium heat and add more Ghee. Use a cup to make the pancakes a similar size, about 4 inches wide. Fry until golden.
4. Serve piping hot topped with more sliced banana, strawberries and maple syrup!
