Rainbow Sandwich

- Two slices of wholegrain bread, lightly toasted.
- 2 tbsp Bonsan Cocomayo

For the filling:
- 3 tomatoes
- Few slices of red onion
- ½ a Red pepper
- 1 Shaved carrot
- ½ an Avocado
- Lettuce or spinach

- Heat the oil in a pan. Add the tempeh and cook until golden, about 3 minutes on each side. Remove from the heat and set aside.
- To form the sandwich toast bread and slather each side with Cocomayo. Layer up your veggies and tempeh on the bottom slice, then top with the other slice of bread.
- Serve and enjoy!
