JACKFRUIT GYROS

1 red onion, finely chopped
4 tbsp Olive oil
1 garlic clove, crushed
200g Bonsan Shredded Jackfruit
3 tbsp flaxseed
⅛ tsp ground cloves
¼ tsp cinnamon
½ tsp ground cumin
2 tsp chilli powder
2 tbsp tomato puree
4 tbsp soy sauce
2 tbsp maple syrup
Salt and pepper to taste
Cucumber, cubed
2 tsp ACV
Parsely, chopped
Vegan tzatziki (2oog sugars yoghurt, 1/2 grated cucumber, 2 tsp oregano, 1 tsp dill, 1 crushed garlic clove juice of 1 lemon, salt and pepper to taste)
6 tortilla wraps, naan or pittas.
Lettuce, optional

Serves: 6

1. Add the oil to a frying pan over a medium heat. Add ½ the onion, jackfruit, seasonings, flaxseed and ½ the parsley. Fry for 10 minutes.
2. Whilst hot, pile onto/into your bread of choice and top with more red onion, parsley, cucumber, tomato, lettuce and vegan tzatziki.
3. Enjoy!
