FISHFREE TACOS

Coriander Slaw:
½ a green cabbage (shredded)
½ a purple cabbage (shredded)
1/4 cup cilantro
Juice of 1 lime (1–2 Tbsp)
1/2 Tbsp agave or maple syrup
1/4 tsp salt
1/4 tsp pepper
1 tsp ACV

Fish:
Bonsan KoFish Free Fillet

Citrus Avocado Sauce:
2 ripe avocados, peeled and pitted
Juice from half an orange
Zest and juice of 1 lime
1 Tbsp coriander
Salt and pepper, to taste

To Serve:
Corn tortillas
Sliced avocado
Lime Wedge
Fresh Coriander

Serves: 4-6

1. For the cabbage slaw: In a large bowl, combine green and white cabbage, coriander, lime juice (start with 1 tbsp), maple syrup, 1 tsp of ACV and salt and pepper. Taste and add additional lime juice or agave (or maple syrup) as desired. Stir to combine well and set aside until ready to serve. The salt, lime juice and ACV will help soften and break down the cabbage.

2. For the Citrus Avocado Sauce: Place all ingredients in a blender and puree until very smooth. Taste and add additional salt or pepper, as needed.

3. Cook the Bonsan Kofu Fishfree fillets according to packet instructions.

4. Assemble your tacos, starting with the cabbage slaw, then the fish and then adding the avocado, Citrus Avocado Sauce, coriander and a lime wedge. Enjoy!
